Troll respawn?

They keep respawning infinitely unless you defeat them in a specific way.
If you kill them with a fire weapon or spell, they won't be able to respawn anymore.
No, it's much faster. If they stayed down for 10 minutes then you could just ignore them and don't have to bother worrying about their respawns.

Trolls will only permanently die if the killing blow has fire damage (fire damage from a weapon, spell, etc). They'll take damage from anything per their resistances, but if the killing blow doesn't include fire damage, they regenerate.
This can be problematic if you and your companion don't have fire damage.
Also note, some skills such as whirlwind, don't apply elemental damage from a weapon. So you, or your companion using whirlwind to land a killing blow would result in a troll regeneration.

Trolls work the same way in EK and Archaelund (they just are a lot bigger in Archaelund) so the advice is relevant either way.
