Should i keep itharak's head?

Short version: You don't need to keep it.
Longer version: At one time there was one quest in which you needed the head (Ancient Verses). However, now demons will drop heads, too. So you don't --need- the goblin head, but you will need a head at some time. Sorry, you can't use Adaon's head.
Also, the Wiki will tell you the same if you look up Head of Itharrak the Firedancer.
