If you have completed everything possible in the game, there should be 7 quests remaining to be completed.

Where is Amarisa?-meet her and research her whereabouts
Relics of the Mangled God-can only start
Smugglers in the Night-can only start
Dubious Poetry-can only start by finding poem
The Shards of Fate-at least 2 shards available (Xidar in Jabal Grotto, Troll King in the fens) (not sure if Red Dragon in the cauldron give one)
Master's Laboratory-can only start
Prodigal Daughter- can only start
