I have just recently got all 4 classes to level 7 on hard and now I want to commit to a singular ironman run(because i enjoy pain)

It is cleric, but how you spec him is realy up to you, personaly i belive that true cleric that joins cleric guild and equip 2h weapon is strongest at high levels, but cleric can change weapons any time, and you can adjust depending on situation to 1h + shield , because it is exactly same build.
And most likely even if you will carry 2h weapon , you will often change for shield for extra protection.
