Say, if I equip a companion with special bonus gear, in this case, a piece with a Gossip bonus, will I receive that bonus in taverns while the companion is with me?

Gossip bonus receive character that equiped item with it (Adaon in your case). Taverns choose character with higher gossip(main or companion).
