I'd say warrior, they're strong the whole game through, with lots of HP, armor and crowd control.
For the second easiest I'd say cleric thanks to their buffs and heal.
Then Ranged Rogue (with Hirge tanking)
Then Melee Rogue
and lastly Mage, mostly because they are very weak in the beginning with limited mana pool, and don't forget they like to go BOOM on themself.

+1 to warrior. They are easily the most versatile class among the four. If u want a more challenging playthrough u can choose mage or cleric

For a true newbie, a Warrior might be the easiest class. Like most games, the warrior class has a more straightforward, harder to mess up build plan. (See something, break something, not a complicate tactic).

For an experienced player new to EK, a Cleric might prove easier for the game. A decent Cleric build has the highest gold/XP accumulation per hour of game play (real world measurements), has healing and limited spell abilities. Some areas are tougher for Clerics (fire dragons for example) but undead areas that challenge other classes are a breeze.

Rogue and Mages are a little tougher for new players as they are squishy and require more nuanced builds to be effective, compared to a warrior.

Rogue with Hirge companion I find to be very effective. Max out Evasion, Precision Strikes and Shots, Massive Criticals, Archery, Stab and Flurry and you pretty much are unstoppable. You can use the Devourer's Sting (Paralysis) and Dirk of Betrayal (Stun) and Bloodied Scarf (Stun Immunity) and really take down major bosses with little trouble at all. Add Sprint to it and you can use Evasion and Sprint to get through a lot of areas that have continuous environmental damage as well.
